Carey's Coconut White Cookies
Ingredients
2 1/2 cups
All Purpose Flour
1 tsp
Baking Soda
1 1/2 tsp
Baking Powder
1/2 tsp
Salt
3/4 cup
White Sugar
1/2 cup
Margerine
2
Eggs
1 tsp
Vanilla Extract
2 tsp
Coconut Extract
1 tsp
White Vinegar
1/2 cup
Medium Coconut (Unsweetened)
Prep
Preheat oven to 350° F.
Grease 2 large cookie sheets.
Directions
In medium sized bowl, whisk together the dry ingredients.
In a large mixing bowl, combine sugar, margerine, eggs, vinegar, and both extracts.
Beat till smooth and creamy.
Add flour mixture in two stages. Mix until smooth.
Mix in the shredded coconut as the last ingredient.
Drop on greased cookie sheet(s) using a spoon and spatula.
Bake at 350 degrees F for 17 minutes.
Remove from cookie sheets to cool on racks.
