Ingredients
- 1/2 cupExtra Virgin Olive Oil
- 1/3 cupReal Bacon Bits
- 1/2Med. Sweet Onion (diced)
- 1 tspGarlic Aisle
- 1 tspBell Pepper Garlic Powder
- 1/2 tspPowdered Cloves
- 1 tbspBasil
- To TasteFresh Ground Pepper
- 2 or 3Chicken Breasts (cubed)
- 4 cupsVegetable Broth
- 1 largeTomato (diced)
- 1/2 cupBasmati Rice
Prep.
- Dice sweet onion.
- Dice tomatoes.
- Cube chicken breasts.
- Preheat broth in microwave, in microwave safe container, but do not boil.
Directions
- In large soup pot, add oil, bacon, spices, and diced onion.
- On medium high heat, caramelize diced onion.
- Add cubed chicken. Sear chicken pieces on all sides stirring constantly, till chicken is nearly cooked through.
- Pour broth into soup pot.
- Add diced tomato and rice.
- Bring to a boil, stirring regularly.
- Lower to a rolling simmer for about 20 minutes, stirring occasionally.
- Boil gently untill rice is cooked, and the rice starch has thickened the broth.
- Serve with your favourite bread or crackers.
- Leftover soup can be stored in the fridge for a later meal.
